Linda Fregoso interviews Joe Avila, a panadero, or breadmaker, and the bakers employed at Joe's Bakery who explain how Mexican "pan dulce" is made. They explore some of the folklore about "Panaderos"—including the rumors about their working hours and the names people call the Chicano breadmakers. Avila also reflects on his work migrant laborers and the coming changes to the bakery profession.
